Ingredients

  • Whole chicken Skin On
  • Marinate with:
  • Crushed Garlic 20 gms
  • Arabian Spice 1.5 tsp
  • Black pepper(toasted n ground) 1 tsp
  • Salt 1 tbsp
  • Taheena (store bought) 50 g
  • Olive oil 100 ml
  • Yogurt 2 tbsp
  • Arabian spice:
  • Black pepper 15 gms
  • Green cardamaom 15 gms
  • Cloves 15 gms
  • White Cumin 20 gms
  • Ground Nutmeg 1 tbsp
  • Ground Cinnamon 1 tbsp
  • Star Anise 7 gms.
  • Grind altogether.

Method:-

Marinate chicken, cover with foil and bake at 200 C for a good hour and half.

Ruz bukhari:

  • Sela Rice ½ kg
  • ChickenStock
  • Onion 1 chopped
  • Bay leaves 2
  • Tomato 1
  • Green chili 2
  • Salt 3 tsp
  • Arabian Spice ½ tsp
  • Ghee 2 tbsp

Method:

Heat ghee saute onions, add bay leaves , add in ground tomato and green chili.

Add in black pepper and Arabian spice and enough stock for the rice.

When boils add in rice and cook till done.

Mandi sauce:

  • Garlic 4 cloves
  • Arabian spice `1/2 tsp
  • b.pepper ½ tsp
  • Salt ½ tsp
  • Green chili 2
  • Tomatoes 2
  • Lemon juice

Blend altogether finally squeeze in lemon juice.

Serve separate or assemble in a dish
